By far, my biggest struggle in the kitchen is meal planning that is not boring and meets all of our needs. My son needs a very calorically dense dinner with tons of protein (and he won't touch a veg that's not a white potato) and my husband and I are both struggling with our weight and love vegetables...see the fun there?! I usually have to make one dinner modified two ways. I'm out of ideas and want help getting my 16 year old interested in trying new foods again.
My biggest struggle is a tiny kitchen with awkward (and minimal) storage space.
In other news, Happy New Year everyone! New Year's Eve was a little surreal for me this year because I tested positive with Covid after being in Ohio with family. I'm doing what I need to do and am thankful my case is not severe or requiring hospitalization. I'm also thankful that a Swipe was my virtual NYE date to watch some movies from our respective couches. The women I have met in this community have been the very biggest treasure these last couple of years!

My biggest kitchen struggle is that the people want me to cook them the food EVERY DAY. But when I make decisions about what to cook they are sad I didn't make chicken nuggets and french fries. EVERY. DAY.
Also I'd really like to learn better knife skills. Because I don't really have knife skills.
My kitchen struggle is that I’m tied to recipes. I’m a good cook, but I have no confidence beyond what’s on the page. (Season to taste?? Whose taste?) Also, I have a very cooking-show host mentality, and I’ll just walk away from the mess like the kitchen elves/show interns are coming to coming to clean it all up. (Spoiler alert: they’re not. Sometimes my husband will clean up, but often that mess will be ignored by all until I rage clean it later.
Creativity is definitely my biggest struggle! Or like the fortitude to follow through with a recipe. If it’s my turn to cook we usually eat something boring 😅
My biggest struggle is meal planning and prepping. Because I have ADHD, I try to limit the number of workday evenings that I have to create a meal from scratch, do all the dishes, etc. And because I'm single, it's relatively easy for me to set a cooking schedule that works for me. However, it's still a struggle for me, and I end up relying too much on the freezer section for a lot of my meals.
Biggest struggle is balancing healthy and what will please all the tastes in my house - mine that wants something new, fresh, delicious each night, I've created a mini me in my teenager daughter, my preteen son who just wants fried food, chicken nuggets, tacos, pasta and pizza, and my sweet husband who will eat anything. PTL for him!
My biggest struggle is deciding what to cook that everyone will be semi-pleased with. I waste so much money eating out because I don’t want to deal with not being able to make everyone happy. I think I have some people-pleasing psychological issues related to this daily chore!!
My biggest kitchen struggle is time. I don’t have much between leaving work, daycare pick, and bedtime for kid. I don’t have much time when we get home to pull something together before bedtime routine begins.
I have no idea how people do this for regular meals, let alone big meals like Thanksgiving & Christmas, when there are nearly a dozen side dishes & a main dish that hogs the oven for hours.

Feeling better as of today - first day in a week I have felt like myself and had energy to do something besides watch tv.
I'm 5'10 too! I've ordered some bookshelves (a la Bri McKoy's kitchen) and am hoping those will help!!
